Quick Tomato Mint Salsa
Make the best of your summer tomatoes with this fresh salsa.
- 1 medium onion (80 g)
- 1 clove garlic
- 250 g cherry tomatoes, halved
- 10 g fresh mint, sliced into thin ribbons (¼ cup)
- 1 tbsp hot sauce
- 1 tbsp lime juice, fresh
- ⅓ tsp coriander, ground
- salt and pepper, to taste
Place onion and garlic in a food processor and pulse until roughly chopped.
Add remaining ingredients and process until the tomatoes are all chopped up and have released their juice.
This sauce should still be chunky, so don't overdo it with the processing
