Potato Goulash with Soy Chunks

Easy to make and very flavourful protein-rich potato goulash.

  • 100 g soy chunks (textured vegetable protein)
  • 240 ml vegetable broth, boiling
  • 300 g potatoes, peeled and cut into bitesized pieces
  • 1 tsp olive oil
  • ½ tsp salt
  • 1 tbsp olive oil
  • 1 red onion, finely chopped (80 g)
  • 1 yellow bell pepper (150 g)
  • 1 tbsp paprika
  • 1 tbsp worcestershire sauce
  • 1 tbsp tomato paste
  • salt and pepper to taste
  • 120 ml water (½ cup) or more for a thinner soup.


  • Place the soy chunks in a bowl and add boiling broth.
  • Cover and let sit for an hour to soak.
  • Meanwhile peel and cut the potatoes into bitesized cubes.
  • Place on a baking sheet and sprinkle with 1 tsp olive oil and salt.
  • Mix with your fingers and place in cold oven.
  • Heat the oven to 200°C and bake the potatoes until crispy, for about 20 minutes.
  • Cut onion and bell pepper.
  • Heat 1 tbsp olive oil in a large pot and add onion and pepper.
  • Fry for about 5 minutes and add reamining ingredients.
  • Add soy chunks plus leftover broth.
  • Add ½ cup water and cook over medium heat, for about 20 minutes.
  • Add more water for a thinner soup.
  • Serve immediately.
